Webinar Series: Process Validation

Description: A key aspect of maintaining Not-Ready-To-Eat status of frozen foods is to ensure that cooking instructions are validated to achieve desired lethality and address any identified risks. Learn from Lea Anne Dea, Conagra Brands, who will focus on steps frozen food manufacturers can take to develop validated cooking instructions for microwaves and other appliances.

Time: 60 minutes

Audience: AFFI members, food safety experts, sanitors, QA, etc.

Key Learning Objectives: Learn key aspects of validating cooking instructions that can be applied on frozen food packaging.


Lea Anne Dea, Conagra Brands

Lea Anne Dea is a registered dietitian and culinary manager with over a decade of test kitchen experience at Conagra Brands. She leads the consumer test kitchen team that writes recipes for  and develops consumer cooking directions for multiple national brands including Healthy Choice®, Frontera® and P.F Chang’s® Home Menu. Prior to joining Conagra Brands, Lea Anne worked as a clinical dietitian and a culinary educator presenting live cooking shows to thousands of people throughout the United States. Lea Anne holds a BS in Dietetics from Iowa State University.
