Description: A key aspect of maintaining Not-Ready-To-Eat status of frozen foods is to ensure that cooking instructions are validated to achieve desired lethality and address any identified hazards. Learn from Professor Juming Tang, Washington State University, who will focus on steps frozen food manufacturers can take to develop validated cooking instructions for microwaves and other appliances.

Time: 60 minutes
