Description: Freezing is an integral feature of frozen food processing and freezers are indispensable to our industry. Freezers also impact food safety therefore freezer hygiene and sanitation play a significant role in the prevention and control of Listeria monocytogenes in frozen foods. One experienced sanitation professional breaks down the important elements of freezer management and best practices in design, sanitation, and monitoring to control microbiological hazards.
