Description: Microbial risk assessment is the systematic approach to determine the risks associated any microbiological hazards such as Listeria monocytogenes. Risk assessment characterizes the nature and likelihood of the hazard from its presence in facilities and foods and from human exposure. In this presentation, Dr. Schaffner, a world-renowned risk assessment expert will explain the general risk assessment process, specific applications for the frozen food industry, and insights on ensuing risk management practices.
